SUMMARY

The Commissary Production Manager is responsible for the efficient and profitable operation daily production.  This position oversees the daily operation of the commissary, oversees the development of all employees, and ensures the best customer service and food service standards are in place. The Commissary Production Manager works any commissary position necessary to see that the commissary operates within Company standards and expectations.  The Commissary Production Manager works an average of 50 hours per week.   

 

RESPONSIBILITIES BY COMPENTENCY:  (*denotes an essential function of the position)

 

Business Results Orientation

*Operate commissary within company guidelines to achieve sales and profit

*Understand how to perform financial analysis and attain expected commissary sales, profits and margins

*Protect company assets at all times by: investigate sizable store shortages; control the inventory, minimize and record waste, complete necessary counts; investigate operating discrepancies and report findings to management in a timely manner

Examine the marketplace for changes that may affect the business

*Manage employees and ASM’s, prepare work schedules, assign specific duties and positions for daily production, coordinate with Kitchen Manager daily to ensure production needs are being met as well as compliance to all food safety regulations, make corrections to production as needed, and ensure payroll submitted is accurate

Develop promotions to increase sales and profits while providing customer satisfaction.

*Work an irregular schedule, including 40+ hours per week and some evenings and weekends

*Maintain regular attendance and follow designated safety practices

Perform other duties not listed as required

 

Communication

Meet all daily, weekly and monthly reporting and information requirements

Hold monthly commissary meetings with all employees to discuss policies, procedures, commissary happenings, and safety issues

*Contact General Manager or Human Resources immediately when employee or customer injury occurs on Company property

*Ensure all communications with and between customers, suppliers, vendors, co-workers, etc is professional and appropriate

*Communicate commissary results with employees and celebrate store successes with the team

 

Customer Service Orientation

*Meet all customer needs as efficiently and effectively as possible by providing superior customer service

*Report to work in accordance with company uniform and appearance standards

*Staff commissary effectively to meet customer service needs while also following labor percentage of sales guidelines

 

*Lead excellent customer service by example, promoting customer awareness and a customer-focused mindset among all employees

*Practice the food defense plan and inform others about the procedures as defined in the Company manual

 

Developing Talent

*Maintain a competent and professional work force and train and develop employees as needed for further growth

Utilize the company educational manual to ensure all Assistant Managers receive the proper training required to efficiently and effectively run a commissary operation

*Evaluate staff as dictated by Company policy

Contact Human Resources for advice or assistance in hiring, counseling, appraising or terminating as necessary

*Ensure staff adheres to policies and procedures defined by Company policy, training guide, job description, etc

*Lead crew in maintaining unit to promote a positive atmosphere that is appealing to staff and falls within management expectations

*Complete training as required to meet regulatory compliance and company guidelines

 

Technical Expertise

*Adhere to all city, county, state, and federal regulations.

Familiarize self and staff with Company Policy Manual, bulletins, memos and other publications

*Calculate and monitor labor percentage of sales for Balanced Score Card figures

*Implement maintenance and cleaning checklist to ensure all areas are clean, safe and operating to maximum efficiency and take immediate action to rectify any safety or maintenance problems

*Understand and utilize all electronic systems used in daily operations

*Complete audits and investigate any discrepancies

*Adhere to all Wallis Companies safety policies and report all safety incidents to supervisor immediately

 

Safety

Conduct and review daily commissary inspections

Attend and participate in safety meetings

*Work diligently to correct safety deficiencies in a timely manner

*Investigate all work-related and/or customer injury/property damage accidents, identifying the conditions responsible and corrective action needed

*Complete safety training required for this position

*Follow all safety policies and procedures

*Inform General Manager of unsafe conditions and behaviors, and recommend how to correct or eliminate them

*Seek General Manager/HR approval to authorize medical treatment

Cooperate with the medical provider, and follow the treatment plan and Return-to-Work Program

Work to avoid preventable accidents

 

SUPERVISORY RESPONSIBILITIES

Direct:  Commissary Assistant Manager, Commissary Shift Leader, Commissary Associate

Is responsible for the overall direction, coordination and evaluation of each production associate.  Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws.  Responsibilities include planning, assigning and directing work; managing training and certifications; appraising performance, rewarding and disciplining employees up to and including termination with supervisor’s approval; addressing complaints and resolving problems.

 

QUALIFICATIONS

Education:                             *Required:  Equivalent to High School diploma

Preferred: Associate’s or Bachelor’s degree

 

Experience:                           *Required: At least one year of experience in convenience store/commissary management or related field
Preferred: At least three years of experience in convenience store/commissary management or related field

 

Language Skills:                   *Ability to read, write, speak, and understand English in a manner that is

sufficient for effective communication with groups of managers, associates, vendors, and customers.

Skills and Abilities:               *Ability to handle multiple priorities

*Goal and safety oriented and must be able to work in a fast-paced environment.

*Ability to perform routine duties involving use of various procedures including general math, the use of thermometers, log sheets and understand and use the tracker/build to system

*Willingness to work a varied schedule

*Ability to manage time effectively, handle multiple priorities, and work with an appropriate sense of urgency

 

 

Technology, Tools,

And Equipment:                   *Required: Computer, Microsoft Office, Telephone, Copy/printer/fax and other equipment necessary for food service operations, Hepatitis A vaccination (where required)

                                                Preferred:  Excel, Jera, Flow Wrap Automation, Conveyors, and other equipment necessary for food service operations.

(Proficiency with preferred items is not required to meet minimum qualifications, but proficiency must be established to complete essential job functions)

 

Certificates, Licenses

and/or Registrations:            *Required:  Basic Sanitation, Serve Safe and/or HAACP Certification.

Preferred:  Serve Safe and/or HAACP (must be completed when courses are

      offered), additional company-offered commissary classes
