Assistant Manager of Banquets and Stewarding

Primary Responsibilities: Acts as Department Manager in the absence of the Director of Banquets. Manage the daily operation, organization, and performance of the Mauna Kea Beach Hotel Stewarding Department.


Essential Duties: STEWARDING

  1. Establish and maintain department procedures, policies and standards, following Department of Health Regulations.
  2. Manage department following company policies, procedures and terms and conditions of the CBA.
  3. Hire, train, supervise, evaluate, counsel, and discipline Stewarding department staff.
  4. Responsible for the scheduling of Stewarding staff. Assists Executive Sous Chef in the management of Stewarding labor cost and other operating expenses.
  5. Responsible for the cleaning of all kitchens, outlets, and bars, to include daily, weekly, and monthly checklists.
  6. Mitigate breakage and loss by developing and implementing storage and handling procedures
  7. Order and maintain an adequate supply of china, glass and silverware for all outlets and banquets.
  8. Conduct quarterly inventories of all china, glassware, and cutlery, to include values and breakage/loss.
  9. Order and maintain an adequate supply of cleaning chemicals and supplies.
  10. Ensure banquet set-up and breakdown is done properly and food is properly stored.
  11. Responsible for the care and proper maintenance of all silverware, hollowware, other kitchen equipment.
  12. Respond and resolve employee and guest concerns in a timely manner.
  13. Routinely check kitchen equipment for proper maintenance and repair.
  14. Ensure safety training and standards are maintained.
  15. Perform other related duties as assigned or required.

Essential Duties: BANQUETS

  1. Review all written communication, i.e., resumes, daily/weekly, MEOs and BEOs.
  2. Communicate all changes within the Banquet Department and
  3. Communicate information to the kitchen and other supportive departments prior to and during events.
  4. Ensure that events are executed according to BEO specifications and hotel standards.
  5. Maintain constant communication with the Catering and Convention Services Manager as it applies to the event and client.
  6. Responsible for the appropriate and timely set up of all functions and meetings while maintaining standards of food, beverage and meeting specifications.
  7. Communicate all daily activities, in person or by log, to the other banquet personnel to ensure smooth transition and follow-up from one function to another.
  8. Assist the Director of Banquets in the development and maintenance of policies, procedures and quality standards within the department, utilizing a continuous improvement approach to ensure a high quality, cost effective and guest-focused operation.
  9. Give daily support and guidance to fellow banquet personnel as well as monitor job performance to ensure a successful meeting/banquet experience.
  10. Inspect and oversee the cleanliness and maintenance of all function space, public

Other Duties:

  1.  Attend resort management meetings.
  2.  Conduct regular department meetings.
  3.  Support the Mauna Kea Resort’s sustainability efforts through active participation in the Green team
  4.  Meet with Executive Chef or Executive Sous Chefs to review daily operations.

Working Conditions:

  1. Normal office conditions
  2. Kitchen noises; people talking in loud voice; pots, pans, cleaning equipment operating.
  3. Work outdoors overseeing banquet set-up.
Work Hours:
  1. Must be able to work schedule set by the Director of Banquets and Executive Sous Chef
  2. Must be able to work long and irregular hours.
  3. Must be able to work in excess of 40 hours per week.

Equipment Use:

  1. Proficient in the use of a computer and with the resort’s word, spreadsheet and other required applications.
  2. Ability to use the telephone
  3. Ability to use various office equipment
  4. Able to operate equipment used to clean the kitchen, equipment, and tableware.
  5. Carts, wagons, warmers.
  6. Vehicle

Mental and Physical Demands:

  1. Ability to prioritize and organize workload to ensure deadlines are met.
  2. Able to manage stressful and challenging situations.
  3. Observant of employees in the workplace, evaluate their performance and productivity, determine areas of concern, training needs and ability to advance in the resort.
  4. Able to walk the hotel to check on all kitchens, functions, and attend meetings.
  5. Sit at a desk to do administrative duties.
  6. Bend, stoop, reach to assist stewards.
  7. Ability to lift and carry 40lbs, push or pull wagons and carts over 100lbs
